Leftover Love A La King
2 cups leftover chicken, turkey, ham, roast beef, or pork
1 ¾ cups sliced mushrooms -fresh or canned(drained)
1 celery stalk-chopped
¼ cup chopped onion
¼ cup chopped green or other color pepper
2 T butter
¼ cup all-purpose flour
1 cup reduced sodium broth
1 cup low fat milk
1 cup peas
2 cups cooked rice, noodle/pasta, mashed potato or roll/biscuit
In a large nonstick skillet, sauté the mushrooms, celery, onion, and pepper in butter until tender.
Combine flour and broth until smooth; stir into vegetable mixture.
Stir in milk.
Bring to a boil.
Cook and stir for 2 minutes or until thickened.
Add the meat and peas; heat through.
Serve over rice, noodle/pasta, mashed potato or roll/biscuit.
